The concept of acid-base balance is increasingly gaining importance in the nutritional approach to healthy eating and a healthy lifestyle. Ageing is often associated with a progressive acidification of the body. Scientific research has shown that the accumulation of acids in the tissues may lead to a slowdown in growth, reducing both physical and cognitive performance, stress, tissue atrophy, osteoporosis and muscle loss . A progressive acidification of the body is also a risk of a decline in kidney function. As a result, acids are even less readily eliminated by the kidneys, which may give rise to a decrease in the pH of the plasma, and a disturbance of the natural buffering capacity of the body . Diet has an important influence on the maintenance of a healthy acid-base balance in the body. Unhealthy western diet that contains a lot of animal protein and saturated fats, is one of the largest sources of metabolic acids. These foods are converted in the mitochondria of cells to volatile acids (C02) or non-volatile acids (lactic acid, phosphoric acid, etc ..). These acids exit the cell via the interstitial space, and then get into the bloodstream. Fortunately, our body has systems (intra- and extracellular buffer systems and elimination organs like lungs and kidneys) which may affect the pH in the bloodstream and the intra- and extracellular fluid compartments back to the right level. The intake of potassium, magnesium, fruits and vegetables are associated with an anti-acidifying effect of the body and a strengthening of the bone density . Zinc supports the action of carbonic anhydrase, an essential enzyme for the maintenance of a healthy acid-base balance in the body.
